So one day, I made myself an eggplant salad. I used pinoy kurat or spiced coconut vinegar instead of the regular vinegar. I also added some fresh tomatoes and chopped scallions. It was really good!
Eggplant Salad
Eggplant is one of my favorite vegetables. Not the American eggplant though...I'm talking about the Chinese kind. Thanks to a thoughtful blogger friend who was very kind to send me some Chinese eggplants in the mail. Thanks again mamiJanice!

that's my fave, too, dhemz! i make that very often kay appetizer man gud. tag-isa lagi ka kaldero ma-birahan. lol. when my parents-in-law were here, i was treated to mama's hinimo. she did most of the cookings kay bag-o lagi daw nanganak, di sa palihokon. lol. sige ko request ug eggplant salad kay lami ikaon ug dili ako naghimo. :)
