Got A New Cookbook!

A week ago hubby got me another cookbook. Oh boy, it's too heavy! This is the heaviest cookbook I've ever had. It's 5.8 lbs and has 797 pages. Thanks again hon! From pasta and pizza dough recipes, lasagna, appetizers, soups, you name it, its in here! It is organized by food genre and a full alphabetized index in the back.
I don't buy cookbook that much. I love the internet because I can just pop in a type of recipe I want, but sometimes it is not a satisfying experience for me. When I enter the dish I want to make comes up with dozens of directories to hundreds of recipes. Moreover once I find a recipe I want to use, I have the choice of printing it out and wasting paper or carting my laptop into the kitchen which doesn't really have a safe space for it to rest while I follow it.

Fruit Dessert

A sweet medley of summer fruit and sherbet make for a satisfyingly simple dish. Just use a melon baller to scoop the sherbet into small balls.

Ingredients

• 1 cup cherry pie filling
• 1 cup sliced fresh strawberries
• 1 cup fresh blueberries
• 1 cup cut-up cantaloupe (1/2-inch chunks)
• 1 cup cut-up fresh pineapple (1/2-inch chunks)
• 1 large banana, sliced
• 1 prepared round angel food cake (10 inch), cut into 12 slices
• 2 cups sherbet, any flavor (1 pint = 2 cups)
• Reddi-wip Original Whipped Light Cream

Directions

Mix pie filling, strawberries, blueberries, cantaloupe, pineapple and banana in large bowl. Place 1 cake slice on each of 12 dessert plates; top evenly with small scoops of the sherbet and the fruit mixture. Top each with a serving of Reddi-wip.

Sadly, I think there’s more reality TV on television now than there is scripted TV series. I understand that reality TV is a lot of times easier and cheaper to make than regular TV shows, but enough is enough.

I can’t be the only person with reality TV exhaustion. Part of that is probably my own fault, buying into watching those shows. But when there’s so much reality programming and so little other material to watch it’s easy to do. Plus, the people that participate in these shows wouldn’t act like that in real life, hopefully. They know the cameras will only focus on them if they act outrageously so it will be must-see drama that will get lots of ratings.

Lately I’ve become so fed up with it that I’ve been using my Clearwire Internet to watch a lot of re-runs of TV shows and movies. I guess this is one positive result of reality TV overload. I’ve also become more open to watching independent films and other movies I’d otherwise wouldn’t have bothered watching before this overload.

My Favorite Children's Show

There are all different kinds of children's shows on the television these days, so it's hard to pick a favorite. But if I had to choose, I would say Dora the Explorer. I have six younger siblings and every morning, I watch this show with them. It is probably one of the most creative shows I have ever seen. Dora mixes Spanish and English together in such a unique way that I see my siblings knowing and understanding the words she speaks. I am learning Spanish myself and I think they are learning faster than I am.

This show also keeps children interested in topics they talk about and get the kids to interact with the characters on television. When Dora asks a question, she waits for the children to respond, and then responds herself as if she really heard their response. It's pretty incredible. Without knowing it, the children who watch her show are learning life long lessons and developing the skills to make their own decisions. That's exactly the kind of children's show that children in this world should be watching.

Every morning, I know that I am going to enjoy watching Dora the Explorer with my younger brothers and sisters on Dallas satellite tv because I enjoy watching them learn and grow as individuals. It is truly a magical experience.

As a mother of two daughters, I can't tell you how crazy my girls go when "The Jonas Brothers" comes up on television. While most children's programs can be boring to watch, I must say that I enjoy watching "The Jonas Brothers" with my two girls. ”The Jonas Brothers" focuses on the lives of three boys who are musicians. In each episode, they are humorously presented with a problem or ordeal they must solve. I am impressed with the way this show instill the idea of "hard work" into the minds of children. My girls now work hard in whatever they do, so they can someday have lives like the Jonas Brothers. I like the way this show motivates my girls to achieve their dreams, so maybe someday they can even own a cool "hangout" house like the Jonas Brothers!

As a parent, you will probably enjoy watching "The Jonas Brothers" with your kids. The guys on the show are so entertaining and funny, that I admit to understanding why my daughters have such huge crushes on them!

Pork Tamales

Steak for Father's Day!

It's almost Dad's special day so why don't treat him to a sumptuous sit-down feast that will be as enjoyable for you to make as it is for him to eat.

Ingredients

• 1 tablespoon olive oil
• 2, 1-1/2-inch-thick beef tenderloin steaks (8 ounces each)
• Salt and pepper
• 2 cups sliced fresh mushrooms
• 2 green onions, thinly sliced
• 1/3 cup brandy
• 1 cup whipping cream

Directions

1. In a large skillet, heat olive oil over medium heat. Sprinkle both sides of steaks with salt and ground pepper; add to hot skillet. Cook for 2 minutes on each side or until brown. Transfer to a 2-quart rectangular baking dish. Bake the steaks, uncovered, in a 400 degree F oven for 10 to 13 minutes for medium-rare doneness (145 degree F).

2. For brandy-cream sauce, in the same skillet cook mushrooms and onions over medium heat till just until tender. Remove the pan from heat; add brandy. Carefully ignite brandy with a long match (mixture will flame up). Or don't ignite brandy; return to heat and simmer, uncovered, for 4 minutes or till most of the liquid is evaporated. When the flame is gone or most of the liquid has been evaporated, add whipping cream. Bring the sauce just to boiling. Boil gently for about 8 minutes or until reduced to 1 cup, stirring frequently. Season with salt and pepper.

Summer Breeze Ribs

You can't go wrong with these classic ribs. They require just 20 minutes of prep time, and your favorite bottled barbecue sauce makes a quick and easy finishing touch.

Ingredients

• 1/4 cup packed brown sugar
• 2 teaspoons seasoned salt
• 2 teaspoons chili powder
• 4 pounds pork loin back ribs or pork spareribs
• 1/4 cup yellow mustard
• 4 cups hickory or fruitwood chips
• 1/4 cup bottled barbecue sauce
• Bottled barbecue sauce

Directions

1. In a small bowl combine brown sugar, seasoned salt, and chili powder. Brush ribs with mustard. Sprinkle brown sugar mixture onto ribs. Cover and refrigerate for 6 to 24 hours.

2. At least 1 hour before grilling, soak wood chips in enough water to cover. Drain.

3. In a grill with a cover arrange preheated coals around a drip pan. Test for medium heat above the pan. Sprinkle some of the drained wood chips over the coals. Pour 1 inch of water into the drip pan. Place ribs, meaty side up, on grill rack over drip pan but not over coals, or use a rib rack placed over the drip pan. Cover and grill for 1-1/4 to 1-1/2 hours or until ribs are tender, adding more coals and wood chips as necessary.

4. Brush with the 1/4 cup barbecue sauce. Grill ribs for 5 minutes more. Serve with additional bottled barbecue sauce. Makes 6 servings.

I don't like eating real sushi. You know...the one that has raw fish and caviar in/on it. However, I like eating California rolls. And this is my fave so far.

What We Do For Fun

Last week, I took my children to a new place here in Salt Lake City, Utah called the Boondocks. I think that my kids had the most fun that I have ever seen them have. When I told them that we were going to the Boondocks entertainment center, they got so excited that we set the Home Security Systems right away and raced for the car. Boondocks is located right off of the freeway and that made it really easy to find. When we got there we could see all kinds of neat things that we could do. There is a huge building with lots of things to do like laser tag that you can play with everyone. They also have a bunch of real fun games that the kids enjoyed for hours. The food there was also very delicious and they offered things that our whole family likes.

On the outside of the building, they have some water activities that are great on hot summer days. The funnest one is the boats where everyone can spray water on each other. The go karts and the fast track were so exciting too! We all had a blast. My whole family stayed there for six hours and never got bored. We want to go again very soon.

Sport Lover

I can enjoy TV like never before now that I have a DVR with my directtv satellite california. I didn’t know how much fun or how much I was missing until I could record my programs. Choosing each one carefully, I had a choice of being home to watch a show or read about it later. Now I can watch shows anytime I choose.

With the advancement of DVR technology I can record a program to watch later. I don’t have to miss a prime time special because someone else in the house is watching a sports program. I can enjoy the sport while knowing I will enjoy my night time choice later. There are so many ways to use the DVR, you never have to feel left out again.

As a sport lover, I like several different types of sports programming and I don’t like to make a choice when there are two shows on at the same time. With a DVR I can watch in picture programming. This is being able to watch one sport program and at the same time watch the other one at the same time in a smaller box on the same screen. It’s the best way to go in modern TV fun.

Fried Lumpia

Lumpia anyone? Aside from pancit and bbq on a stick, lumpia is hubby's ultimate Filipino fave dish. He's been begging me to make lumpia for several times, but I keep resisting because it takes too much of work....whoaa....lazy wife....lol!
To satisfy hubby's craving, I made him his favorite Filipino dish the other day. He was delighted when he found out that we are having lumpia for dinner.

I used sweet and sour mix for dipping sauce!

According to Wikipedia, Lumpia are pastries of Chinese origin similar to spring rolls popular in Indonesia and the Philippines. The term lumpia derives from lunpia in the Hokkien language. The recipe, both fried and fresh versions, was brought by the Chinese immigrants from the Fujian province of China to Southeast Asia and became popular where they settled in Indonesia and the Philippines. In the Netherlands and Flanders, it is spelled loempia which is the old Indonesian spelling for lumpia and has also become the generic name for "spring roll" in Dutch. A variant is the Vietnamese lumpia, wrapped in a thinner piece of pastry, in a size close to a spring roll though the wrapping closes the ends off completely, which is typical for lumpia.

What I like to do with my son on the internet

My son, Nicolas, and I love to surf for animal websites using my awesome hughesnet internet service. He likes to learn everything he can about animals and loves to especially see pictures of baby animals. I try to limit his internet time to no more than thirty to 45 minutes a day, though if he finds something he really wants to keep doing I may extend that to as much as an hour. Either way, I make sure that he is supervised the entire time to ensure that he is not seeing things I would rather he did not see. I have always loved watching real life crime shows. Everything about them interests me. So the show The First 48 has always been one of my favorites on television. For the last three seasons, I have been hooked on watching these real life detective work to solve crime. This unscripted show allows for cameras to follow investigators and police officers through every step involved in solving a murder. The show is set in different cities across the United States and typically follows the same detectives throughout the season. Each episode centers around two crimes and two detective teams. Through this process you get to see how they interact with each other, crime victims and suspects. It is really a complete; insiders look to what solving crime.
I tune in each week on my Directtv and am fascinated by how well these detectives do their jobs. Not only do you get to see the steps of solving a crime, but you also get a first hand look at what it’s like to live the life of a homicide detective. Access in their offices and homes is allowed and it is amazing to see how the jobs affect all aspects of their social and private lives.

Hot Chili Soup

Chili soup in a warm weather? I know I know...I'm in such a bad timing! but who cares if I make chili soup...lol! I made this for dinner last week. It was delicious! Here's a recipe for yah.
1 lb. ground beef
1/2 of an onion, chopped
1 28 oz. can diced tomatoes
1/2 cup water
1 Tbsp. flour
2 Tbsp. brown sugar
1/4 cup ketchup
1 16 oz can hot chili beans, juice and all, do not drain
2 tsp. chili powder
1/4 cup canned hot jalepenos, chopped
several shakes of Tabasco sauce

Brown beef with onion. Stir in rest of ingredients. Simmer, covered, for 30 min. Best serve with sour cream & shredded cheese

Five Stain-Busters to Have on Hand

Today's detergents are remarkably effective for general stain removal, but there are a few other products that you should keep on hand to deal with stubborn stains.

1. Bleach. For dingy clothing, white or colored, you need bleach. Chlorine bleach is for white and colorfast clothes, and all-fabric bleach brightens colors. Be sure to follow instructions carefully with chlorine bleach. Add the bleach after the tub is full and just as agitation starts.

2. Enzyme Stain Remover. For stubborn organic stains such as wine, dairy, foods, berries and grasses, you need an enzyme stain remover such as Biz, Axion or Mary Ellen's Stain Remover Formula One for white and colorfast clothes and Formula Two for colored clothes.

3. Hydrogen Peroxide. For fresh bloodstains, the solution is three percent hydrogen peroxide (the kind sold as an antiseptic, not a bleach).

4. Rubbing Alcohol. For ink stains, have rubbing alcohol on hand. Sponge alcohol onto the stain until all ''bleeding'' stops. Let dry and repeat.

5. Prewash Stain Treatment. For a heavily soiled load—like cooking oils and motor oils, especially on synthetics—use a prewash soil and stain remover such as Shout or Spray 'n Wash.

Gossip Girl

While it may seem that I shouldn’t still be watching teenage melodramas, I still do. Gossip Girl is one of my most guilty pleasures, and I tune in every week to catch the latest in the twisted web of lies, clothes and hookups. The story lines are not too unlike what I imagine Soap Opera story lines to be, but I’m still interested. The show is never boring and just when you think something has been figured out or finished, something new and outrageous happens to bring you right back in. Each story line has more than just twist and turns, they have dives and loops. There is no corniness as in other teenage dramas, instead these kids in New York live more interesting lives than most adults.
Other than the storylines, Gossip Girl has some of the most amazing clothes and fashions each week. I am in awe of the amazing fashion risks and beautiful pieces that each character flaunts on screen. Each character has their own unique and personal style that are all enviable in their own way. Between the clothes and the story line, there is no getting bored with Gossip Girl. Waiting to see what one character will wear is alone worth being an avid watcher. If this show wasn’t part of all the direct tv packages I don’t know what I would do!
