Procedure:
- Preheat the oven to 350°F/180ÂșC
-Stuff the body cavity of the fish with all the ingredients.
- Wrap with aluminum foil. Place in a baking pan.
- Bake the fish in the oven for 1 hour and 30 minutes

Steamed Dumplings

I have been longing to make pork or beef dumplings for a long time now, but I just kept forgetting it. I am planning to make this hearty small bites dish for Easter Sunday....I hope!
Beef Steamed Dumplings

Ingredients

* 2 cups all-purpose flour
* 1/2 teaspoon salt
* 2 tablespoons hoisin sauce or reduced-sodium soy sauce
* 1 teaspoon cornstarch
* 1 cup finely chopped bok choy
* 1 medium carrot, shredded (1/2 cup)
* 2 tablespoons thinly sliced green onion
* 2 tablespoons snipped fresh cilantro
* 1/4 teaspoon salt
* 3/4 pound lean ground beef
* 1/4 cup rice vinegar or white vinegar
* 1/4 cup reduced-sodium soy sauce
* Snipped fresh chives (optional)

Directions

1. For dough, combine flour, the 1/2 teaspoon salt, and 2/3 cup boiling water in a medium mixing bowl, stirring constantly with a fork. Add 1/4 cup cold water; mix with your hands until dough forms a ball. (The dough will be sticky.) Cover; set aside.

2. For filling, stir together hoisin or soy sauce and cornstarch in a medium mixing bowl. Stir in bok choy, carrot, green onion, cilantro, and the 1/4 teaspoon salt. Add ground beef; mix well. Using about 1 tablespoon of the filling for each, shape filling into 30 balls. Set aside.

3. Divide dough in half. Return one portion to the bowl; cover and set aside. Divide the other portion into 15 balls. On a well-floured surface, roll each dough ball into a 3-inch circle. Place a meatball in the center of each circle. Fold the dough up and around all but the top of the meatball, pleating dough firmly. Gently flatten the bottom of each dumpling. Repeat with remaining dough and meatballs to make 30 dumplings total.

4. Bring water to boiling in a steamer or Dutch oven. Place dumplings, open sides up, on a grease steamer rack; make sure the dumplings don't touch one another. (If all the dumplings won't fit on a steamer rack, refrigerate remainder until ready to steam.) Place rack over, but not touching, boiling water. Cover and steam dumplings for 16 to 18 minutes or until internal temperature reaches 160 degrees F. Meanwhile, combine rice vinegar or white vinegar and soy sauce. Sprinkle with 1 teaspoon thinly sliced green onion. Serve with dumplings. Makes 30.

Egg Planter

Tap the pointed end of an egg firmly with a table knife to just break through the shell; turn it slightly and tap again to remove the "cap." Discard the contents and rinse the shell. Next, create a drainage hole by carefully pushing the point of a small knife through the bottom of the shell.

All-Natural Easter Egg Dye Recipes

My daughter is very excited because tomorrow she is going to color eggs. Every Easter season we always have a blast decorating Easter eggs at our house and it is always a mess! This year I am thinking of using a natural dye to color the eggs. I looked up some ideas in the net, and here's what I found.

The secret is natural dyes made with household ingredients such as strong coffee, grape juice, blueberries, orange peel, and beet juice.

Pink

1 cup pickled beet juice and 1 tablespoon vinegar

Lavender

1 cup grape juice and 1 tablespoon vinegar

Brown

1 cup strong coffee and 1 tablespoon vinegar

Blue

Cut 1/4 head of red cabbage into chunks. Add cabbage to 4 cups boiling water. Stir in 2 tablespoons vinegar. Let cool to room temperature. Remove cabbage with a slotted spoon.

Bluish-Gray

Mix 1 cup frozen blueberries with 1 cup water. Bring to room temperature. Remove blueberries.

Dark Pink

Cut 1 medium beet into chunks. Add beet to 4 cups boiling water. Stir in 2 tablespoons vinegar. Let cool to room temperature. Remove beets.

Yellow

Remove the peel from 1 orange. Add peel to 4 cups boiling water. Stir in 2 tablespoons vinegar. Let cool to room temperature. Remove orange peel.

FTF: Grilled Pork Tenderloin


I heard it's Food Trip Friday's first year anniversary this month, wohooo! way to go Mommy Willa. Congratulations! I guess I'm heading over there right now....:) Here's my share for this week, a grilled pork tenderloin with buttered green beans


Ingredients

* 2 (1 pound) pork tenderloins
* 1 teaspoon garlic powder
* 1 teaspoon salt
* 1 teaspoon ground black pepper
* 1 cup barbecue sauce

Directions

1. Prepare grill for indirect heat.
2. Season meat with garlic powder, salt, and pepper.
3. Lightly oil grate. Place tenderloin on grate, and position drip pan under meat. Cook over indirect heat for 30 minutes.
4. Brush tenderloin with barbecue sauce. Continue cooking for 15 minutes, or to desired doneness. Slice pork, and serve.

Stuffed Cucumber Kimchi

Stuffed cucumber kimchi is one of those hot/cold dishes so welcomed on a sunny summer day. Countries with hot climates use chilis in abundance, and Korea is no exception. The heat from the chilis causes sweat, which cools the body as it evaporates, while the cold, crispness of the cucumbers refreshes. It is the national dish of Korea, where no meal is served without at least one bowl of this spicy, condiment-like salad. I had this korean side dish when we visited one of the restaurants in South Korea. Not my favorite...ehehehhe!

Let's make biko!
3 cups glutinous rice (malagkit)
1 and 1/2 cups water
1 1/2 cup brown sugar
3 cups coconut milk (gata)
3/4 teaspoon salt
1 tbs fennel seeds

PROCEDURE FOR MAKING BIKO

1. Combine the glutinous rice, water, brown sugar, coconut milk and salt in a large non-stick pot.

2. Turn on medium heat and stir the mixture continually until the liquid is absorbed and the rice is soft and fully cooked.

3. Transfer the rice mixture to a flat rectangular baking dish. Use a pancake turner or spoon to flatten and smooth the top.

4. Let cool until the rice mixture firms up.

5. Slice into serving pieces and serve topped with fennel seeds.

Prosciutto Asparagus Spirals

Ingredients
1 package (17.3 ounces) Pepperidge Farm® Puff Pastry Sheets, thawed
6 tablespoons garlic & herb spreadable cheese, softened
8 slices prosciutto or thinly sliced deli ham
30 medium asparagus spears, trimmed
Directions
  1. Heat the oven to 400°F. Unfold the pastry sheets on a lightly floured surface. Spread 3 tablespoons cheese on each pastry sheet. Top each with 4 slices prosciutto. Cut each into 15 strips crosswise, making 30 in all.

  2. Tightly wrap 1 pastry strip around each asparagus spear, prosciutto-side in. Place the pastries seam-side down onto 2 baking sheets.

  3. Bake for 15 minutes or until the pastries are golden brown.

Charcoal Grill Setup

Here is a simple tip on how to setup a charcoal grill.

The amount of charcoal required depends on how much of the area of the grate will be used for cooking. If the entire area of the grate will be used for cooking, an even layer of coals should be spread across the entire bottom of the grill. If only a portion of the grate will be used for cooking, the coals should extend about 2 inches beyond the area where the food will be cooked.


After determining the correct quantity of charcoal to use, the briquettes can be placed in a mound in the center of the grill.

Self-lighting briquettes, containing a petroleum product for easy lighting, can be used. The coals are easily lit with a long match.

An alternative, for those who do not like using petroleum products, is to use regular briquettes, which can be lit more easily with the aid of a chimney starter. Newspaper is placed in the bottom of the chimney and the charcoal is placed on top. The newspaper is lit from the bottom and the fire is drawn up to the charcoal above.

The charcoals are ready when they are glowing and are evenly coated with a layer of gray ash. This process usually requires at least 30 minutes. The coals can then be spread evenly across the bottom for direct heat grilling or they can be placed in several different configurations for indirect heat grilling.


Many people like to add a small log or two of their favorite hardwood, such as apple or oak, to the coals in order to provide a more pronounced smoked flavor to the food. Softwoods should not be used because they burn too quickly, do not provide good flavor, and emit too much soot.

An easy method for estimating the grilling temperature is to place the palm of your hand 3 or 4 inches above the grate. The length of time you can leave your hand comfortably above the grate determines the heat intensity:

  • 10 seconds = low fire
  • 8 seconds = medium-low fire
  • 6 seconds = medium fire
  • 4 seconds = medium-high fire
  • 2 seconds = high fire

Use a long handled brush to oil the grate before grilling any food. This will help prevent food from sticking to the grate.


A charcoal grill can be used for about an hour before the coals begin to die out and the heat is no longer sufficient to continue cooking. If a longer cooking time is required, the coals must be replenished. It is best to remove the grate, add the coals, and wait until they are properly lit before continuing with the cooking process. The fresh charcoal usually requires only half the length of time (about 15 minutes) to be ready than starting coals from scratch.

Carrot-Pineapple Upside-Down Cake

Ingredients

  • 1/3 cup packed brown sugar
  • 2 Tbsp. butter
  • 1 Tbsp. water
  • 6 to 8 1/4-inch-thick slices fresh pineapple, cored and halved
  • 2 cups all-purpose flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 3/4 cup milk
  • 3 carrots, finely shredded (1-1/2 cups)

Directions

1. Preheat oven to 350 degrees F. Lightly coat a 9x9x2-inch baking pan with nonstick cooking spray; set aside.

2. In small saucepan combine brown sugar, 2 Tbsp. butter, and water. Cook and stir over medium heat until mixture comes to boiling and is smooth. Pour in prepared pan; tilt to evenly coat bottom. Arrange pineapple slices over top.

3. In medium bowl combine flour, baking powder, salt, and nutmeg; set aside.

4. In large mixing bowl beat 1/2 cup butter on medium-high 30 seconds. Gradually add granulated sugar, beat until combined; beat 2 minutes more. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Alternately add flour mixture and 3/4 cup milk; beat on low after each just until combined. Stir in carrots. Spread batter over pineapple.

5. Bake 45 minutes or until golden and wooden pick inserted in center comes out clean. Cool in pan on rack 5 minutes. Invert on platter. Cool 30 minutes. Makes 9 servings.

Yehey! I got my kimchi! I am glad hubby went to the grocery store last night and bought me a jar of kimchi. Dang! This jar is almost 4 dollars. I just can't believe how pricey kimchi is. It's more expensive than meat and to think about it...it's only made of cabbage and some spices...lol!

Banana, Strawberry, and Yogurt Smoothie Ice Cream

Dinner Table Etiquette - the 10 Do's!

1. Once seated, unfold your napkin and use it for occasionally wiping your lips or fingers. At the end of dinner, leave the napkin tidily on the place setting.

2. It is good dinner table etiquette to serve the lady sitting to the right of the host first, then the other ladies in a clockwise direction, and lastly the gentlemen.

3. Hold the knife and fork with the handles in the palm of the hand, forefinger on top, and thumb underneath.

4. Whilst eating, you may if you wish rest the knife and fork on either side of the plate between mouthfuls. When you have finished eating, place them side by side in the center of the plate.

5. If the food presented to you is not to your liking, it is polite to at least make some attempt to eat a small amount of it. Or at the very least, cut it up a little, and move it around the plate!

6. It is quite acceptable to leave some food to one side of your plate if you feel as though you have eaten enough. On the other hand, don't attempt to leave your plate so clean that it looks as though you haven't eaten in days!

7. Desserts may be eaten with both a spoon and fork, or alternatively a fork alone if it is a cake or pastry style sweet.

8. Should a lady wish to be excused for the bathroom, it is polite for the gentlemen to stand up as she leaves the table, sit down again, and then stand once more when she returns.

9. Always make a point of thanking the host and hostess for their hospitality before leaving.

10. It is good dinner table etiquette to send a personal thank you note to the host and hostess shortly afterwards.

Korean Side Dishes

Our tour guide said that every Korean meal includes anywhere from 2 to 12 side dishes (banchan). The most important and well-known is kimchi, of which there are 100+ varieties. Pretty interesting!
Anyhow, here are some Korean side dishes served to us during our visit to South Korea. The only side dish I like is Kimchi. I actually bought a jar of kimchi when we were there. And now it's all gone. I might need to look around in the grocery store to see if they sell kimchi.
The dried seaweed (black color)called “GimJaban” has very similar taste with the seaweed that is used for kimbap or sushi.

Jogging Stroller

One of the best things to stay in good shape is to exercise. Jogging is the best way to burn the extra calories present in our body. It is the most efficient exercise which has lots of benefits. I have been trying to lose weight for a few years now and my husband wanted to lose his belly, but we have not been able to do that. Chicken Afritada by Mama Sita's

Chicken afritada anyone? When I was cleaning our pantry the other day I found some packets of Mama Sita's menudo/afritada mix. I am glad I have all the ingredients, so I made an afritada chicken using Mama Sita's Menudo/Afritada Mix.


I know I could never be able to make this dish from scratch. Good thing Mama Sita's packet mix came in handy. You can buy it in any Oriental stores or if you don't have one nearby, you can just buy it online.

A Taste of Bibimbap


When we went to Seoul City our tour guide brought us to a special Korean restaurant where they serve good bibimbap. Hubby was not too impress when he saw the picture of bibimbap, so he ordered a korean barbecue instead...lol! And I had bibimbap for the first time! What is bibimbap anyway? Well, Bibimbap is a popular Korean dish. The word literally means "mixed rice." Bibimbap is served as a bowl of warm white rice topped with namul (sautéed and seasoned vegetables) and gochujang (chili pepper paste). A raw or fried egg and sliced meat (usually beef) are common additions. The ingredients are stirred together thoroughly just before eating. It can be served either cold or hot.

Vegetables commonly used in bibimbap include julienned cucumber, zucchini, mu (daikon), mushrooms, doraji (bellflower root), and gim, as well as spinach, soybean sprouts, and gosari (bracken fern stems). Dubu (tofu), either plain or sautéed, or a leaf of lettuce may be added, or chicken or seafood may be substituted for beef. For visual appeal, the vegetables are often placed so that adjacent colors complement each other.

Minted Strawberries with White Wine

Do you know what this is? I know you see some strawberries inside, but this is actually a minted strawberries with white wine. I might want to try making this drink for my in-laws this coming Easter.
Minted Strawberries with White Wine


Ingredients
6 cups strawberries
1 cup sugar
2 bunches fresh mint (1-1/2 oz.)
2 to 3 cups dry white wine such as Sauvignon Blanc
Fresh mint sprigs
directions
1. Halve large berries; leave hulls on a few berries. Place berries in a large bowl; sprinkle with sugar and cover bowl with plastic wrap. Let stand at room temperature at least 1 hour, stirring once or twice.

2. Remove mint leaves from one bunch of mint. Stack 6 to 8 leaves together; roll the stacked leaves. Slice across the roll to create narrow strips. Repeat with remaining leaves. Add the shredded mint to strawberries just before serving.

3. To serve, evenly divide the minted berries and juices among 8 glasses; pour wine over berries until just covered. Garnish with mint sprigs. Makes 8 servings.

For a nonalcoholic version, use white grape juice instead of wine and reduce the sugar to 2 tablespoons.

I got some dover fish in the fridge! Well, not a fresh one though....lol!
What is dover sole? According to Wikipedia, the common sole or Dover sole is a species of fish in the Soleidae family. It has a preference for relatively shallow water with sand or mud covering the bottom. It is found in the Eastern Atlantic ocean, from the south of Norway to Senegal, and in almost all of the Mediterranean Sea. In the winter it withdraws to the somewhat warmer waters of the Southern North Sea.

The small eyes are close to each other on the right-hand side of the body. This gives the fish the possibility of lurking half-buried in the sand for passing prey. The common sole, just like all other flatfish, hatches as an "ordinary" fish with one eye on each side of the body. The young metamorphose to flatfish when they are about one cm long. The common sole approaches a maximum length of approximately 70 cm.
